About this dish
We season minced chicken with fennel seed, garlic and black pepper, and crumble it on raw so it cooks in the oven. Black olives bring the salt.
The sausage is made in small batches, so this pizza does sell out on busy evenings.

- Tomato: hand-crushed plum tomatoes
- Mozzarella: fresh cow's milk mozzarella
- Chicken sausage: seasoned with fennel seed and garlic
- Black olives: pitted and halved
- Oregano: dried
