Our story

One oven, then four

A neighbourhood pizzeria that grew one kitchen at a time.

A cook at the wood-fired oven

It started with asecond-hand oven

Forno Rosso opened in 2018 in a narrow shop on Chapel Road in Bandra, with a wood-fired oven bought from a bakery that was closing and a menu of six pizzas.

The rules from that first year still stand. The dough rests for 48 hours. The sauce is tomatoes, salt and nothing else. Pasta is rolled every morning and what is left at night is not sold the next day.

Today there are four kitchens: Bandra, Lower Parel, Powai and Andheri. Each has its own oven, its own dough room and a team that eats the same food it sends out.

House rules

Four things we do not bend

  1. 1

    Dough

Rested 48 hours, stretched by hand, never rolled with a pin.

  2. 2

    Fire

A 450°C oven floor, so a pizza bakes in about 90 seconds.

  3. 3

    Honesty

Allergens on every dish, estimates given as a range, no surprise charges.

  4. 4

    Neighbours

Each kitchen delivers only as far as the pizza stays good, about 5 km.
