About the house

A spice room thatkeeps honest books

Saffron Ledger buys whole spices from one district at a time, stores them in closed drawers and grinds nothing until it is ordered.

Folio 01The story

It started witha ledger

Saffron Ledger began in 2019 in a rented room on Bazaar Road in Mattancherry, the old spice quarter of Kochi, where pepper and cardamom have changed hands for five hundred years.

The first thing we bought was not a grinder but a ledger. Every sack that came in was entered by hand: what it was, where it was grown, the harvest, the weight and what we paid. That book is why we can tell you which district your cumin came from.

We still work the same way. Spices arrive whole and stay whole in closed drawers. Each week's orders are weighed out, roasted or ground if you asked for that, and sealed in tins with the batch number and grind date on the label.

Folio 02The rules

How the room works

  1. 01
    One district per spice

We name the origin on every tin and do not blend lots to hit a price

  2. 02
    Whole until ordered

Grinding happens once a week, in small lots, on a slow stone mill

  3. 03
    Nothing added

No colour, flour, salt, oil or anti-caking agent, in any product

  4. 04
    Recipes in the open

Every blend is listed by weight, to the percent
