45-Day Dry-Aged Ribeye
$58
Bone-in ribeye dry-aged 45 days and cut to order.
Description
Whole rib primals hang in our glass-fronted ageing room at 36°F for 45 days. The outside dries to a crust that we trim away, and what is left tastes deeper and nuttier than fresh beef.
Cook it simply: salt, a very hot pan and a five minute rest.

Ordered a second one
Nutty, rich and nothing like a supermarket steak. I cooked the first in cast iron with only salt and ordered another for my father's birthday the same night.

Good questions
Delivery, storage, doneness and gift cards. Still unsure? The team replies within a working day.
Ask the butcherEvery product page has a Cut & doneness guide showing the weight, the thickness and how many people each size feeds. As a rule, allow 8 to 10 ounces of boneless steak per person and about a pound each for anything on the bone. In the dining room we cook to five points: rare (125F), medium rare (135F), medium (145F), medium well (150F) and well done (160F). We recommend medium rare for dry-aged steak. Not sure? Ask at the counter or call us.
