HERITAGE PORK-22%A thick chop that stays juicy.
Bone-In Pork Chops
$21$27
Heritage Duroc pork chops, bone in, cut an inch and a half thick.
Description
Duroc pork is darker and better marbled than standard pork. We cut the chops thick and leave the fat cap on so they do not dry out over the fire.
Brine them for an hour, grill over medium heat and take them off at 145°F.

Weeknight staple
Thick chops with a good fat cap, and they stayed juicy on the grill. The 1 lb pack is two chops, which was a little less than I imagined, so I would choose the 2 lb pack for a family.

Good questions
Delivery, storage, doneness and gift cards. Still unsure? The team replies within a working day.
Ask the butcherEvery product page has a Cut & doneness guide showing the weight, the thickness and how many people each size feeds. As a rule, allow 8 to 10 ounces of boneless steak per person and about a pound each for anything on the bone. In the dining room we cook to five points: rare (125F), medium rare (135F), medium (145F), medium well (150F) and well done (160F). We recommend medium rare for dry-aged steak. Not sure? Ask at the counter or call us.
