Two oat cookies, one scoop and twenty minutes in the freezer. The easiest dessert to make with a tub.

An ice cream sandwich needs a cookie that stays soft when frozen and a scoop that is not rock hard. Get those two right and the rest is assembly.
The cookies
Bake any oat or chocolate chip cookie two minutes less than the recipe says. Slightly underbaked cookies stay chewy in the freezer. Let them cool completely.
The scoop
Leave the tub on the counter for five minutes. Put one flat scoop on the underside of a cookie and press a second cookie on top until the ice cream reaches the edge.
The freeze
Wrap each sandwich in baking paper and freeze for twenty minutes so it firms up. They keep for a week.
The edges
Roll the sides in crushed nuts, sprinkles or cookie crumbs before freezing. This is the part children like best.
What to try
Strawberry with oat cookies, or dark chocolate with chocolate chip. A 500 ml tub makes eight sandwiches.
