From cherry to cup in eleven steps
What happens to a coffee cherry between the bush and your morning cup, step by step.

Coffee cherries ripen unevenly, so our pickers go through each row three or four times between November and February, taking only the red ones.
The cherries are pulped the same day, fermented overnight in tanks, washed in stream water and dried on the yard for ten to fourteen days. Every evening the beans are raked into ridges and covered against the dew.
After curing and grading, the beans rest for two months before we roast them in the old shed. You can watch every step on the plantation walk.
