4:00 amMorning milking
The herd is milked in a clean parlour. Milk goes straight into a chiller and is brought down to 4°C within minutes.
4:45 amTested and packed
Every batch is checked for fat, SNF and adulterants, then pasteurised and sealed in bottles and pouches.
5:30 amMorning run leaves
Each zone has its own rider, so your milk travels a short, fixed route. Windows: 5:30 to 7:00 am and 7:00 to 8:30 am.
9:00 amCurd, paneer and ghee
The rest of the morning's milk is set into curd, pressed into paneer and churned for butter and ghee in small batches.
3:30 pmEvening milking
A second milking in the afternoon, chilled and packed the same way.
5:00 pmEvening run leaves
Two evening windows: 5:00 to 6:30 pm and 6:30 to 8:00 pm.

From 5:30 am to 10:00 pm, anything in the shop is packed from the cold room in your zone and sent out in minutes.
